  • Cut from the tenderloin and trimmed of fat
  • Very lean cut, full off flavour and wonderfully tender
  • Very rich cut of meat, same cut where Fillet Mignon Steaks come from
  • Suggested cooking: seasoning rub, pan sear to keep juices in and then roast until internal temperature reaches 120F (for rare)
  • Please allow 7-14 days as this is a special order product
